Turkey Fried Rice

Revive that leftover turkey from Thanksgiving by giving it an oriental twist. This turkey fried rice is easy and delicious.


  • 1 cup cooked turkey, diced
  • 2 large eggs
  • 1 tablespoon olive oil
  • salt & pepper to taste
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups cooked white or brown rice
  • 3 tablespoons soy sauce


Crack the eggs into a bowl and whisk until smooth. Heat a nonstick skillet on low heat. Pour the eggs into the skillet. Using a spatulala stir the egg mixture until cooked through. Remove from pan and chop into small pieces. In large pan add olive oil and diced onion. Salt and pepper onions to taste. Cook on medium heat until onions are translucent. Add minced garlic, turkey and rice. Cook for one minute. Add eggs and soy sauce. Cook on medium heat for 2 minutes. Serve immediately .
